Most sourdough recipes just tell you to add a set amount of starter and move on. But that number isn’t fixed — it’s a dial, and it’s one of the most useful ones you have. - 15-20% — the everyday default. A same-day loaf that goes through bulk fermentation in roughly 4-8 hours at comfortable room temperature. This is where most recipes land.
- 5-10% — the slow, hands-off route. A long, gentle ferment ideal for overnight on the counter or fitting around a workday. More patience, more tang, less watching.
- 25-30% — the fast track. When you’re short on time and want the dough ready in a hurry. Watch it closely; it can gallop past its peak before you expect.
These are ranges, not laws. Your kitchen, your flour, and your starter’s vigor all shift the timing. Treat the number as your opening bid and adjust from there.
It works together with temperature
Inoculation isn’t the only dial — it partners with temperature, and the two are easy to confuse. Warmth speeds fermentation; cold slows it, exactly the way more or less starter does. That means you can trade them off each other.
In a hot summer kitchen, a normal 20% inoculation can overproof faster than you’d believe, so dropping to 10-12% keeps things manageable. Read the dough, not the clock
Here’s the crucial catch: changing your inoculation changes your timing, so the clock in your old recipe no longer applies. If you cut your starter in half, that “bulk ferment for 5 hours” instruction is now wrong — it’ll take considerably longer.
