Then this morning you tipped the basket over and… half the loaf stayed behind. A ragged crater where the smooth top should be, dough hanging off the coils like it never wanted to leave.

    It’s one of the most deflating moments in sourdough — an entire overnight proof, wrecked in the last two seconds. The good news: sticking is almost never bad luck. It’s a small number of fixable causes, and once you know which one is biting you, the fix takes minutes.

    First, what a banneton is actually doing

    A banneton (or brotform) isn’t magic — it’s a shaping mold that wicks a little moisture from the dough’s surface while it holds a round or oval shape during the final proof. That slightly drier skin is what gives you a clean release and a crust that scores well and springs in the oven.

    Sticking happens when that surface either never dries, or gets glued to the basket by wet flour paste. So the whole game is: keep the dough’s outer skin taut and lightly floured with the right flour, and don’t leave it in there long enough (or wet enough) to weld itself to the coils.

    Cause #1: You’re using the wrong flour

    This is the single most common culprit. If you dust your banneton with regular wheat flour and the dough is anything above a moderate hydration, the flour absorbs water, turns to paste, and gelatinizes into glue. It feels like you floured the basket, but you actually made wallpaper adhesive.

    The aliquot jar: the most reliable method

    Here’s a simple, robust method. You’ll need your whole-grain gluten-free flour, water, and a clean jar.

    Day 1. Mix roughly equal weights of flour and water — about 50g flour to 50g water — into a thick batter. Use filtered or dechlorinated water if your tap water is heavily chlorinated, since chlorine can slow the wild microbes you’re trying to encourage. Cover loosely (a lid resting on top, or a cloth) and leave it somewhere warm.

    Days 2–4. Once a day, discard about half and feed it fresh — another 50g flour and 50g water, stirred in well. You’ll likely see the first small bubbles somewhere around day 2 or 3. Don’t be alarmed if there’s an early burst of activity that then goes quiet; that first flush is often the wrong bacteria, and the jar frequently stalls for a day before the real yeast takes hold. Keep feeding.

    Days 5–7 and on. As it strengthens, move to feeding twice a day if it’s rising and falling quickly, and watch for a real pattern: it should predictably bubble up, dome, and then fall a few hours after each feed.     The Real Reasons Your Loaf Won’t Open Up

    Four things create an ear, and any one of them failing will flatten it: the dough still has to be springy and not overproofed, the surface has to be under tension, the score has to be cut correctly, and the oven has to be hot and steamy. Chase them in that order, because a perfect score cannot rescue dough that has nothing left to give.

    Cause 1: Your Dough Is Overproofed

    This is the number one ear-killer, and it is the cruelest, because an overproofed loaf feels so promising in the bowl – puffy, alive, full. But if the dough has fermented too long, the yeast has already spent most of its gas and the gluten has gone slack and tired. There is simply no stored energy left for a violent rise in the oven, so the loaf just spreads and seals over instead of bursting upward.

    The fix is to catch the dough earlier.     Even perfectly proofed dough will not open cleanly if its skin is loose. The ear needs a taut outer surface to push against – a drum, not a puddle. If your shaping leaves the dough slack and shapeless, the expansion has nowhere to concentrate and simply flows outward.

    Two fixes work together here. First, build real strength during bulk fermentation with a few sets of stretch-and-folds so the dough holds its shape. Second, shape with intention: create tension across the surface by dragging the shaped round against the counter to tighten the skin, then proof it seam-side up in a banneton so that taut face becomes the top you score.     Cause 3: You Are Scoring It Wrong

    This is where most bakers actually lose the ear, and it usually comes down to three habits.

    The first is the angle. A vertical, straight-down cut opens into a valley, not an ear. To get a lifting flap you want a shallow angle – hold the blade at roughly 30 degrees to the surface and slice almost sideways, cutting under a thin lip of skin. That lip is what peels back and curls into the ear.

    The second is depth and confidence. A timid, shallow scratch heals shut; a hesitant sawing motion drags and tears. You want one smooth, committed stroke about a quarter to half an inch deep, in a single pass. Use a genuinely sharp blade – a lame or a fresh razor, never a butter knife – so it glides instead of dragging the surface.

    The third is temperature. Cold dough scores like a dream and warm, slack dough smears and sticks. Proof your shaped loaf in the fridge overnight and score it straight from the cold – the firm surface takes a clean, crisp cut and holds the shape of your lip until the oven sets it.

    Cause 4: No Steam, or an Oven That Isn’t Hot Enough

    You can do everything above perfectly and still lose the ear in a dry oven. Steam keeps the crust soft and flexible for the first crucial minutes, buying time for the loaf to expand and the ear to peel up before the surface hardens. Without it, the crust sets almost instantly – locking the loaf shut like glue and choking off the spring.

    The simplest reliable fix is a preheated Dutch oven: it traps the loaf’s own moisture into a private steam chamber. Preheat it hard, get the dough in fast, and keep the lid on for the first 20 minutes or so, then remove it to color the crust. And genuinely preheat – a fully hot oven (usually around 230 to 250C, 450 to 480F) delivers the initial blast of heat that drives oven spring. A lukewarm oven gives a lazy, ear-less rise.

    A Repeatable Routine That Gets an Ear

    Put the chain together and it becomes a checklist you can trust. Build dough strength with stretch-and-folds. Catch the proof a little early rather than late.     Deal with the hooch

    That dark liquid on top has a name: hooch. It is alcohol the starter produced when it ran out of food, and its color – from pale grey to nearly black – is normal and harmless. Hooch is simply another sign your starter has been hungry for a while.

    You have two choices. You can pour it off for a slightly milder, less sour result, or stir it back in for a tangier one. When you are reviving a neglected starter, pouring it off is usually the cleaner move – it takes some of the accumulated sharpness with it. Tip off the liquid, then look at what is underneath. A grey, unappetizing paste is completely expected. Scrape off any hardened, dried crust around the rim and get down to the softer starter beneath.

    The revival: small, frequent feedings

    Reviving a starter is not about one dramatic rescue feeding – it is about consistency. Here is the routine that works on almost any dormant starter:

    • Take only a little. Scoop a small spoonful – about a tablespoon – of the old starter into a clean jar. Discard the rest. This matters: a small amount of tired starter fed with a lot of fresh flour recovers far faster than trying to resuscitate the whole sad mass at once. You are diluting the acidity and giving the surviving microbes a fresh, uncrowded buffet.
    • Feed it generously. Add equal weights of fresh flour and lukewarm water – a common ratio is 1 part starter to 5 parts each of flour and water by weight for a neglected jar. Stir to a thick-batter consistency. Cover loosely and leave it somewhere warm, ideally around room temperature or a little warmer.
    • Feed it twice a day. Roughly every 12 hours, repeat: keep a small amount, discard the rest, feed with fresh flour and water. Warmth and regular meals are the whole secret.

    For the first day or two you may see almost nothing – maybe a few shy bubbles. Do not lose faith. Somewhere around day two or three, you will notice it start to dome, bubble, and smell less like acetone and more like pleasant, yeasty bread. That is the turn. Keep feeding.

    How to know it is truly back

    A revived starter is ready to bake with when it does one thing reliably: it doubles in size within about 4 to 8 hours of a feeding, and does it again the next day. Bubbly and risen, then predictably risen again – that consistency is the real test, not a single lucky rise.

    A quick confidence check is the float test: drop a small spoonful of active starter into water. If it floats, it is full of gas and ready to leaven a loaf. If it sinks, give it another feeding or two – it is close, just not quite there.

    When to actually let it go

    Almost every neglected starter comes back. There is really only one situation where you should give up on it: visible mold. Fuzzy spots – pink, orange, black, or green fuzz – or streaks of pink or orange on the surface mean it is time to throw the whole thing out, jar and all, and start fresh.
